Food Preservation Sites Save Harvests

There are many methods for "putting up" a surplus of food.

Right now home gardens are exploding with a cornucopia of produce; veggies and fruits often ripening and rotting before they can be eaten. The simple solution to the potential waste is to preserve your bounty for future use. Whether your preservation choice is canning, fermenting, drying, smoking or curing, these sites provide valuable advice and methods for ensuring that your sweat equity in the garden translates into yummy meals at a later date.

Canning Across America – Created by renown food writer and chef Kim O’Donnell, this site gathers a nationwide, ad hoc collective of cooks, gardeners and food lovers committed to the revival of the lost art of “putting by” food. Their goal is to promote safe food preservation and the joys of community building through food. There are many incredible recipes on this site. Check out the Simple Blackberry Jam.

National Center of Home Food Preservation – Consider this the online bible to food preservation. The University of Georgia created and manages this site that addresses food safety concerns for those who practice and teach home food preservation and processing methods.

Wild Fermentation – Fermentation followers will tell you that this method not only makes food taste amazing but makes it more nutritious too. This site is helmed by Sandor Ellix Katz (aka Sandorkraut), longtime fermenter and book author on the topic. He demystifies fermentation as a method for preservation and provides great resources for any experience level.

Ball – The essential tool for canning is the Ball jar so it would make sense that the company has it’s own website on the subject. I love the "getting started" area because it explains the basics of canning in clear and easy terms.
